Seeing things through the eyes of a child may lead you down a most honest and wonderful path. Some of my favorite moments these days are going on dates with my three-and-a-half year old daughter, Delphinium. Visiting Bar Vasquez is easily one of our favorite spots. We typically go on Mondays as it’s a little quieter. I hold these moments close – there’s a unique joy of being in that space and eating so many things, just the two of us.
More of us should be like Delphinium. She shamelessly loves the food she wants to eat (and has a very well-defined palate) and knows that combining that with a welcoming space and nice people will make her happy.
This week, her first course was the “Calamari with Squirty Tomados”- a dish that is cooked on the plancha, which leaves it tender and snappy. She sensibly makes it disappear in two minutes while it is still warm and at its best.
She then orders the Salmon from the Plancha, or as she calls it “the Salmon with all the Colors.” And it’s true. The dish is verdant green with a warm blue potato salad and the best and most beautiful avocado that Mario mysteriously finds.
Sometimes she wants “Beef, Daddy! It’s good for you.” Our amazing Uruguayan beef is as good for you as beef gets. She prefers the beef rare and served with a “dip-dip” (house-made steak sauce), even though the chimichurri is incredible.
Most recently, the “tall asparagus bread” has become a staple. It’s a crispy, pillowy Fugazza that comes from our wood oven with seasonal garnishes. All the best produce is starting to fill our kitchen after this damp spring.
Like I said before, more of us should be like Delphinium. I’m constantly in awe at how my three-and-a-half year old daughter has figured out how to live her best life. I spend a lot of time immersed in the details of what we do on a day-to-day basis, but my daughter is still a whole lot smarter than I am. To that end, I’ve attached a current menu.
